Father's Day Breakfast Tacos with fluffy eggs, cheese, and any of your favorite toppings! Loading them with crispy bacon, sausage, or spicy chorizo! These are fast and delicious. The best part is they are customizable for the whole family!

Ingredients
8 small flour tortillas
12 oz. chorizo, sausage, or bacon, casings removed
8 large eggs
¼ cup milk
Salt and Pepper
2 tablespoons unsalted butter
1 cup shredded cheddar, or Mexican cheese blend
1 large avocado, diced
1 cup of your favorite salsa, pico de gallo, or chopped fresh tomatoes
Hot sauce
Cilantro to garnish
Here's how to make it
Step 1 Preheat oven to 300' F degrees and prepare all the toppings for assembly.
Step 2 Set a large skillet over medium-high heat and add chorizo. Break it up with a spatula and cook until browned and fully cooked, then transfer to a paper towel-lined plate to drain. Cook bacon in the oven until browned and crisp, drain on paper towels, and chop.
Step 3 Wrap flour tortillas in foil in 2 stacks of 4 and place in a preheated oven at 300'F for 15 minutes or until heated. Remove from the oven and keep tortillas warm in foil until ready.
Step 4 In the same nonstick skillet you cooked the sausage in, remove any excess oil with a paper towel, and melt the butter in the pan on low heat.
Step 5 To a medium-sized bowl, add the eggs, milk, salt, and pepper and beat with a fork until the eggs are well blended and full of air bubbles.
Step 6 Once eggs are frothy, add to the warm pan. Turn up the heat slightly and allow the eggs to sit until you see them begin to cook at the edges. Using a silicone spatula, pull the cooked sides of the eggs toward the middle, allowing the liquid eggs to take the place of the cooked eggs, tilting the pan while working the skillet edges until the eggs are cooked medium. Now fold the scrambled eggs onto themselves. Remove from the heat when the eggs look a little moist, and they will finish cooking on the residual heat from the skillet. Be careful not to overcook. When done, they should look moist but not runny. Cover to keep warm until you are ready to assemble your tacos.
Step 7 Fill each warm tortilla with eggs, then shredded cheese to melt over the eggs. Add bacon or chorizo, avocado, pico or salsa, hot sauce, and your favorite toppings. Garnish with cilantro, and serve warm.
