To make this Mexican-inspired cabbage soup recipe you need need just a few ingredients. Here is your shopping list: ground beef, onion, taco seasoning, cabbage (read about the health benefits of cabbage), carrots, a can of beef broth and two cans of diced tomatoes. You can also grab some cilantro and sour cream, for serving, if you feel so inclined.

Ingredients

• 1 - 1 1/2 pounds ground beef or ground turkey
• 1 onion, chopped
• 1 ounce (1 packet) taco seasoning
• 1 head cabbage, chopped
• 1 carrot, chopped
• 14 ounces (1 can) beef broth
• 28 ounces (2 cans) diced tomatoes
• 3 cups water
• chopped cilantro, for garnish (optional)
• sour cream, for serving (optional)

Recipe Notes

• You could use ground turkey or ground chicken instead of ground beef. 

• The tasty cabbage soup recipe reheats beautifully! 

• You could add more vegetables like potatoes, zucchini, corn or broccoli.

Here's how to make it: 

1. Cook the ground beef and onion in a large soup pot until meat is browned and onion is soft, about 5 minutes
2. Add the remaining ingredients, bring to a boil, reduce heat and cook gently for about 45 minutes. Season with salt if pepper.
