Baked Potatoes Hack: A Delicious Baked Potato Recipe in Half the Time Side Dishes Vegetarian

I love carbs, especially potatoes. Bring me all the potatoes. I struggle with timing everything when I cook (and may be a bit of a lazy cook, too), so I often don’t make them. For instance, I love baked potatoes but they take about an hour to bake and I find that I’m often waiting on them when everything else is ready. Well, not anymore!

I have found the perfect, easiest hack for baking potatoes in half the time, and they cook through and taste delicious! The secret is cutting them in half. That’s it! It’s as easy than that. If they’re half the size, they cook in half the time. I prep them a bit but there’s nothing to it. When you bake them with the cut side down, the result is a potato that’s tender on the inside and browned and crispy on the outside, just how my family likes them.

To serve as a traditional baked potato, mash the tops lightly with a fork. Add butter and/or salt, if desired. To get the most nutrition out of the potato, cut it up and eat it with the skins on. The skin has more nutrients than the inside of the potato. It can have up to 12 times more antioxidants than the flesh and is a great source of potassium, magnesium and fiber.

Ingredients

• 4 medium-sized potatoes
• olive oil (I use EVOO)

Here’s how to make it:

1. Preheat oven to 450 degrees F. Wash potatoes well, then carefully slice them in half, lengthwise. Brush or rub them with olive oil. Sprinkle them with salt and pepper, to taste.
2. Line a baking sheet with parchment paper and spray it lightly with cooking spray, to prevent potatoes from sticking. Place the potatoes cut side down on baking sheet and prick the tops with a fork.
3. Bake until the potatoes are tender in the middle and lightly browned on the edges, about 25 to 35 minutes depending on your oven and the exact size of the potatoes. You can prick them with a fork to test doneness.
