The holidays are a great time to make breakfast casseroles because you can feed a whole bunch of people and use up some holiday leftovers. Leftover Christmas ham is one of my favorite ingredients to put into breakfast casserole recipes. If you like the ham and cheddar flavor combination, then you will love this creamy high-protein ham and cheese egg casserole recipe!

This high-protein egg casserole recipe is so simple to make yet is absolutely delicious. Along with the great ham and cheese flavor, this recipe includes creamy cottage cheese, so you get the health benefits of protein. Best of all, this gluten-free casserole has only four ingredients and is so easy to put together.

Here's what you need to make this cheesy egg casserole recipe this weekend: eggs, cottage cheese, ham and shredded cheddar cheese. You whip the cottage cheese with the eggs in a blender, then add the ham and cheddar. You pour the mixture into a casserole dish that you bake until cooked through and golden brown.

This flavorful egg casserole makes a hearty breakfast or a perfect holiday brunch. You also could whip it up as an easy breakfast for dinner meal anytime. I served it as part of a holiday brunch (using leftover holiday ham) with toast and fresh fruit!

Ingredients

• 6 medium eggs
• 1 1/2 cups cottage cheese
• 1 1/2 cups cooked ham, diced
• 1 1/2 cups shredded cheddar cheese

Recipe Notes

• I used a Le Creuset casserole dish that measures 10x8 inches.

• Garnish with fresh parsley, if desired.

• Store leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave.

Here's how to make it:

1. Place the eggs and cottage cheese in a blender and whip until smooth, about 30 seconds.
2. Pour the cottage cheese mixture into a medium mixing bowl.
3. Add the ham and the cheddar cheese. Season with black pepper, to taste, if desired (I skipped the salt because the ham was already salty). Stir to combine.
4. Pour the mixture into a baking pan or casserole dish (see Recipe Notes) that's been sprayed with cooking spray.
5. Bake in a preheated 350-degree F oven for 25 to 35 minutes, or until the casserole is cooked through and golden.
6. Allow to cool for a bit before slicing and serving.
