Ingredients
- 1 pound salmon fillets
- 1 tablespoon olive oil
- 8 ounces penne pasta (or your favorite pasta), cooked according to package directions
- freshly grated Parmesan cheese, for serving
Sundried Tomato Cream Sauce
- 4 cloves garlic, minced
- 1/4 cup sundried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1/4 teaspoon paprika
- crushed red pepper flakes, to taste
- 1 tablespoon minced fresh flat-leaf Italian parsley
Here's how to make it:
- Season the salmon with salt and pepper. Heat the olive oil in a skillet. Add the fish and cook until cooked through, about 4 minutes per side. Remove to a plate.
- To make the sundried tomato sauce, Add the garlic to the skillet and cook 30 seconds. Add the sundried tomatoes and cook about 1 minute. Pour in the heavy cream. Add the paprika and red pepper flakes. Bring to a simmer and cook until it begins to thicken up, about 2 minutes. Add the minced parsley. Season with salt and pepper.
- Flake the salmon into bite-sized pieces. And it and the pasta to the sauce. Cook about 1 minute, tossing gently to combine. Serve with freshly grated Parmesan cheese.
