Ingredients
- 20 ounces (2 packages) frozen chopped spinach, thawed and squeezed dry
- 8 ounces cream cheese, softened
- 1 teaspoon seasoned salt (or to taste)
- 1 cup shredded mozzarella cheese (or your favorite cheese)
Recipe Notes
- You could bake in individual ramekins, if preferred.
- Instead of mozzarella cheese you could use cheddar, Monterey Jack, Parmesan, Swiss, fontina, gruyere, gouda or any cheese that melts well.
- Need to thaw the spinach fast? Put it into a mesh strainer or colander and run it under cold water. Squeeze dry with paper towels or a clean kitchen towel.
- Not a big fan of cheesy casseroles? Top it with breadcrumbs instead of more cheese. You could even cut the amount of cream cheese in half.
- Store any leftovers in an airtight container in the fridge for up to five days.
Here's how to make it:
- Stir together the spinach, cream cheese and seasoned salt in a mixing bowl. Spoon into a 2-quart baking dish.
- Bake in a preheated 350-degree F oven for about 15 minutes. Top with the cheese and bake 5 minutes more.
