Ingredients

• 2 sweet bell peppers, chopped or sliced
• 1 onion, chopped
• 1/4 cup olive oil
• 1/2 teaspoon garlic powder (or to taste)
• 1/2 - 1 teaspoon crushed red pepper flakes (or to taste)
• 5 pounds boneless/skinless chicken thighs

Recipe Notes

• Consider making two or three batches to freeze and maximize your prep time.

• You can use orange, yellow or red bell peppers, or a combination.

• You could use chicken breasts, but chicken thighs are juicier.

• Don't like spice? You can omit the crushed red pepper flakes.

Here's how to make it: 

1. Put all the ingredients into large freezer bags. Adjust amounts in each bag to fit your family size. I got three bags.
2. Remove as much air as possible, seal and place in the freezer for up to 3 months.
3. When ready to cook, defrost in the refrigerator overnight. Put the ingredients into a slow cooker. Season with salt and black pepper, to taste.
4. Cook on low for 4 to 6 hours or on high for 3 to 4 hours. Chicken is done when it reaches 165 degrees F internal temperature on a food thermometer.
5. Serve over rice or noodles and enjoy!
